Zucchini Parmigiana

A Slice of Life

Summer, with its fruits and vegetables… there’s truly so much to create in the kitchen. I have to admit that I especially love the abundance of seasonal produce during this time of year. And beyond the culinary side, it’s so enjoyable to spend time outdoors, enjoy nature, and take part in all the activities organized across Quebec. In fact, we rarely travel outside the province during this season, so we can make the most of everything it has to offer.

About Zucchini Parmigiana

I still wonder how I managed to overlook parmigiana all these years. This traditional recipe from southern Italy is originally made with eggplant, but several variations have developed using other vegetables or even meat.

Like many Italian recipes, it’s a simple dish made with basic ingredients—yet incredibly flavorful.

I completely fell in love with this recipe. I highly recommend trying it, and I think you’ll understand why. In a few days, I’ll test the original version with eggplant and share my thoughts, but I have a feeling it’ll be delicious.
