Enquanto procurava uma ideia de sobremesa, deparei-me com esta receita de Eton Mess, uma receita tradicional inglesa (aparentemente, estou em minha fase anglo-sax\u00f4nica) que rapidamente me atraiu o olhar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sobre o Eton Mess<\/h2>\n\n\n\n<p>Esta receita \u00e9 uma composi\u00e7\u00e3o bem simples, id\u00eantica \u00e0 uma pavlova, mas em uma vers\u00e3o desmontada. A receita original \u00e9 composta de merengue franc\u00eas, chantili e morangos, mas podemos escolher as frutas de acordo com o gosto e as esta\u00e7\u00f5es. Seu nome vem do c\u00e9lebre Eton College (escola brit\u00e2nica de renome), e <em>mess<\/em> (bagun\u00e7a) faz clara refer\u00eancia \u00e0 sua desorganiza\u00e7\u00e3o. Simples, n\u00e3o?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">O merengue<\/h2>\n\n\n\n<p>Esta \u00e9 a parte mais delicada da receita. O cozimento do merengue \u00e9 sempre complicado, eu tive alguns percal\u00e7os ao longo dos anos. Mas n\u00e3o s\u00e3o intranspon\u00edveis. Segui os super conselhos do blog &#8220;<a href=\"https:\/\/www.undejeunerdesoleil.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Un D\u00e9jeuner de Soleil<\/a>&#8221; e meus merengues ficaram deslumbrantes! Ent\u00e3o, eu os convido para olharem com detalhes os conselhos de Edda, mas farei para voc\u00eas um pequeno resumo, aqui est\u00e3o os pontos importantes:<\/p>\n\n\n\n<p>1 &#8211; utilize as claras dos ovos \u00e0 temperatura ambiente (de prefer\u00eancia, separe-as das gemas alguns dias antes, como se faz para os macarons. Conserve-as na geladeira at\u00e9 o dia D).<\/p>\n\n\n\n<p>2 &#8211; Comece a montar as claras apenas (sem a\u00e7\u00facar). Depois, uma vez que estiverem bem espumosas, adicione o a\u00e7\u00facar progressivamente. Continue a mont\u00e1-las at\u00e9 que estejam firmes e formem ponto de bico (forma de bico de passaro).<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img decoding=\"async\" width=\"225\" height=\"300\" src=\"https:\/\/delamourencocotte.com\/wp-content\/uploads\/2021\/12\/1-3.jpg\" alt=\"\" class=\"wp-image-6167\"\/><figcaption>Ponto de bico<\/figcaption><\/figure><\/div>\n\n\n\n<p>O cozimento \u00e9 a etapa mais sens\u00edvel. O merengue \u00e9 delicado e deve ser assado a baixa temperatura, entre 90 e 120<sup>o<\/sup>C (195 a 250<sup>o<\/sup>F), durante 1h a 1h30 para os merengues pequenos (2 a 3h para os merengues grandes). Uma vez assados, deixe-os no forno por v\u00e1rias horas em seguida. Para obter merengues bicolores, eu segui os conselhos do blog de Anne-Sophie, &#8220;Fashion Cooking&#8221;. Pincele o interior da ponta de um saco de confeiteiro com um pouco de corante l\u00edquido.<\/p>\n\n\n\n<figure class=\"wp-block-video aligncenter\"><video height=\"270\" style=\"aspect-ratio: 270 \/ 270;\" width=\"270\" controls src=\"https:\/\/delamourencocotte.com\/wp-content\/uploads\/2021\/12\/Colorant.mp4\"><\/video><\/figure>\n\n\n\n<p>Depois, coloque o bico para merengue no saco. Ao moldar os merengues, eles ser\u00e3o bicolores. Voc\u00ea precisar\u00e1 de creme de leite \u00e0 35% de gordura (creme fresco), a\u00e7\u00facar, uma tigela e uma batedeira.<\/p>\n\n\n\n<p>De prefer\u00eancia, coloque a tigela no congelador durante 15 a 30 minutos antes, isso n\u00e3o \u00e9 indispens\u00e1vel, mas permitir\u00e1 que o chantili se desenvolva mais rapidamente. Despeje o creme e o a\u00e7\u00facar (eu gosto de chantili pouco doce, at\u00e9 porque o merengue j\u00e1 leva bastante a\u00e7\u00facar, mas isto \u00e9 uma quest\u00e3o de gosto, adicione as quantidades de a\u00e7\u00facar que voc\u00ea gosta).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">As frutas<\/h2>\n\n\n\n<p>O Eton mess \u00e9 geralmente feito com morangos, mas voc\u00ea pode utilizar qualquer fruta, fresca ou em compota.
