O c\u00e9u cinza, a chuva, o frio que se instala, essa pandemia, muito trabalho \u2026 enfim, uma longa lista que me deixa mal-humorada. Ent\u00e3o, hoje n\u00e3o vou fazer muita coisa, e nem mesmo cozinhar (temos muitas sobras para terminar, ent\u00e3o, nada de desperd\u00edcio). Estou t\u00e3o atrasada em minhas receitas para publica\u00e7\u00e3o que tentarei avan\u00e7ar nisso. Ent\u00e3o, estou sentada no meu sof\u00e1, olhando minha lista de receitas para publicar, e tenho um pequeno e agrad\u00e1vel Harry Potter tocando ao fundo  (sim, sou uma grande f\u00e3) enquanto estou me aquecendo com um bom ch\u00e1. O t\u00edpico &#8220;dia de casulo&#8221;, s\u00f3 terei que sair daqui a pouco para pegar os pequenos na escola (mas, honestamente, posso at\u00e9 delegar isso ao meu marido). E a\u00ed, para me animar, um pouco de gulodice tamb\u00e9m poderia ajudar, n\u00e3o acha?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sobre o caramelo<\/h2>\n\n\n\n<p>Ahh!, que gula! Um bom caramelo cremoso para derramar sobre panquecas ou brioches, e at\u00e9 mesmo para passar nas torradas de manh\u00e3. Admito que n\u00e3o tenho muita resist\u00eancia a essa gula.<\/p>\n\n\n\n<p>Gostaria de compartilhar esta receita com voc\u00eas h\u00e1 algumas semanas, depois de ler uma receita em que as instru\u00e7\u00f5es eram para usar caramelo comprado na loja. De fato, sempre existe essa op\u00e7\u00e3o, mas vamos ser honestos, um caramelo caseiro leva de 5 a 10 minutos, e eu garanto que ficar\u00e1 muito melhor.<\/p>\n\n\n\n<p>O segredo ? Apure os ouvidos, vou revelar para voc\u00ea: fique colado na panela at\u00e9 que o caramelo esteja na cor desejada. \u00c9 verdade que podemos perder rapidamente o caramelo se n\u00e3o o olharmos, pois h\u00e1 o risco de queimar, e isso n\u00e3o \u00e9 bom de jeito nenhum. O outro segredo: despeje o creme quente, em pequenas por\u00e7\u00f5es (e n\u00e3o fique por cima porque pode respingar, risco de queimaduras). Ah, e na verdade, existem 3 segredos. O \u00faltimo: glucose l\u00edquida. E isso faz uma grande diferen\u00e7a!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingrediente em destaque: glucose<\/h2>\n\n\n\n<p>O xarope de glucose \u00e9 um l\u00edquido espesso proveniente do amido de milho. \u00c9 muito utilizado na ind\u00fastria aliment\u00edcia, principalmente na fabrica\u00e7\u00e3o de balas, caramelos, sorvetes, etc. Auxilia principalmente na preven\u00e7\u00e3o da cristaliza\u00e7\u00e3o do a\u00e7\u00facar, auxilia tamb\u00e9m na conserva\u00e7\u00e3o e confere uma textura mais lisa. Observe tamb\u00e9m que ele tem um poder ado\u00e7ante de cerca de metade do a\u00e7\u00facar em p\u00f3. N\u00e3o \u00e9 muito dif\u00edcil consegui-lo. Voc\u00ea pode encontr\u00e1-lo em algumas lojas especializadas (eu compro o meu na &#8220;La Guilde Culinaire&#8221;) ou no BulkBarn, ou na internet. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A glucose \u00e9 indispens\u00e1vel?<\/h2>\n\n\n\n<p>Na verdade, n\u00e3o.<\/p>\n\n\n\n<p>Voc\u00ea pode ficar sem e apenas usar o a\u00e7\u00facar, mas a textura final ser\u00e1 bem diferente. Veja o v\u00eddeo. O primeiro caramelo que apresento \u00e9 o caramelo apenas \u00e0 base de a\u00e7\u00facar, e o segundo com a glucose.
