No-bake easy mascarpone mousse with berries
A delicious mascarpone mousse with fresh fruit, what a great combination ! This recipe is easy and no baking required, for a touch of freshness at the end of the meal.

In a bowl pour the egg yolks, mascarpone, sugar and rum. Mix the whole to obtain a homogeneous cream.
Beat the egg whites until stiff. Gently fold them into the cream. Set aside.
Cut the fruit into small pieces. Place them in the bottom of the glasses.
Spread the mascarpone mousse over the fruit.
Put them in the refrigerator overnight (ideally, otherwise at least 4 hours).
Just before serving, crush the crackers into breadcrumbs and sprinkle them over the top of the mousses.
